The first thing I did here was create a background layer with a solid colour, which would stand out from the work-image as it was being cut out. This helps me see how clean the edges are that have been cut.
I then create a mask over the work-image, so that I can begin cutting in a non-destructive manner. I use the polygon lasso tool, which is similar to the pen tool, to create my selections and then fill them with 'black' (applying transparency to the selected pixels).
I moved slowly around the image, doing this as I went. I stopped as soon as I reached the fine strands of her hair as I needed to use another technique to cut this part of her out.
